“This German soup with cabbage, potatoes, tomato, and dill may be made with either chicken or beef. Finished with dill, and great with a dollop of sour cream.”

Adjust Servings

Original recipe yields 10 servings

  1. Place chicken in a large pot of water. Bring to a boil, reduce to a simmer, and cook approximately 30 minutes. Remove from water, cool, and shred into bite-size pieces. Discard skin and bones.
  2. In a large stock pot, heat 1 gallon of water with tomato soup and salt. Bring to a low boil. Place cabbage, potatoes, carrot, onion, chicken, and bay leaf in pot, and return to a simmer. Cook at a very low simmer until vegetables are tender, approximately 20 minutes. Add parsley and dill, taste and adjust seasoning with salt if needed, and serve.

This was delicious! I sized the recipe down to serve 5, and added all the ingredients(except bay leaves, didn't have any), into the crock-pot. Turned it up to high for about 4-5 hours. Instead of bone-in chicken pieces I used boneless chicken thighs, and dried dill instead of fresh. My family ate with no complaints! We enjoyed the soup with some stoned wheat crackers. It makes great left overs the next day. Thank you Star20 for the great borsht. 5 stars...would make again! :)

Wonderful, hearty meal!!My german grandma made something similar but added crushed hard boiled eggs and stirred in the whole container of sour cream to the pot,it has been a Christmas eve tradition for years and it freezes great too for later. Also taste good with turkey beef or pork!!

My family of four thought this was acceptable but not a do-again. I followed the recipe exactly but we just did not enjoy it that much. Sorry!
