  1. Puree olive oil and chipotle peppers in a blender until smooth. Spread over flank steak, and marinate in the refrigerator overnight.
  2. Preheat a grill for medium-high heat.
  3. Grill the flank steak to desired doneness, about five minutes per side for medium.

  • The chipotle puree will become crusty and begin to burn as you grill the steak. The trick is to get the heat just right so that the beef is ready just as the chipotle begins to singe.

I LOVE (I cannot stress this enough!) this recipe! I did, however, find that if I added just enough water to the mixture BEFORE blending, it came out thin enough so that I could use a flavor injector. I injected the steak all over, and then let it sit in the fridge overnight. This allowed the flavor to really give the meat a workover. Yummy yummy! The perfect balance of spicy and sweet!

Very flavorful! I used one can of chipotle and it was very spicy. Great flavor, though. Saved the leftovers for burrito bowls.

I have used this marinade sevral times now. Everyone loves. It may be a little spicy for kids.
