Directions

  1. Preheat oven to 350 degrees. Grease 13x9x2-inch glass baking dish with shortening.
  2. For cookie base, combine brown sugar, shortening, JIF(R) Extra Crunchy Peanut Butter, granulated sugar and egg in a large bowl. Beat at medium speed of electric mixer until well blended.
  3. Combine flour, baking powder and salt. Add gradually to creamed mixture at low speed. Beat until well blended. Cover. Refrigerate for 15 minutes. Press chilled cookie base into prepared dish. Bake for 20 minutes or until light brown. Do not over-bake. Cool 2-3 minutes.
  4. For topping, place JIF(R) Creamy Peanut Butter in microwave-safe measuring cup. Microwave at HIGH for 1 minute. Pour over baked surface. Spread to cover. Cover with marshmallows. Drizzle chocolate syrup over marshmallows. Return to oven. Bake 5 minutes or until marshmallows are light brown. Do not over-bake. Loosen from sides of dish with knife. Remove dish to cooling rack. Cool completely. Cut with sharp greased knife into bars about 2x2 inches.

These bars were really really good. I added chopped Reese's PB cups to the baked cookie layer before adding the marshmallows. This was a GREAT addition and provided another peanut butter flavor dimension with just a hint of chocolate. Perfect! I did not top with syrup, it seemed like overkill. My only complaint with these bars is that they are very difficult to cut and serve. The marshmallows stuck to the knife and upon taking a bit the marshmallow topping seperated from the bar. These were wonderful when eaten with a spoon along side some icecream!

Though I liked the way everything tasted together, the marshmallows were terribly difficult to cut through and ended up coming off the top layer of the bars. If something else was used for a topping instead of marshmallows these could really be terrific. I also added Rees's Pieces for some extra flavor after the base layer in the pan.

These bars are really yummy. They are kind of messy to cut into squares because the marshmallows are so gooey, but that's nothing to complain about. Yum!
