A great meaty loaf with no bread, so it's great for low-carb diets. Tasty and sure to satisfy! This beef and pork sausage meatloaf is loaded with pepper jack cheese, bacon, chopped pistachios, and spinach.

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place bacon in a large deep skillet over medium-high heat. Add onions, and cook, stirring frequently, until bacon is crisp and onions are transparent. Drain off excess grease, and set aside to cool.
  3. In a large bowl, mix together the ground beef, pork sausage, bacon and onions, spinach, olives, pistachio nuts, 1 cup of ketchup, eggs, and meatloaf seasoning until well blended. Pat meat into a loaf shape, and place in a large baking pan. A roasting pan will work well. Poke cheese cubes into the top of the loaf so they are completely covered. Brush remaining ketchup generously over the top.
  4. Bake for 1 1/2 hours in the preheated oven, or until the internal temperature of the loaf is 180 degrees F (82 degrees C).
  5. All done! Now take a photo, rate it, and share your accomplishments!

Really great flavor, especially for a meatloaf. I did cut this down to feed only 6. To cut down on the grease, use ground chuck or sirloin beef and use lean pork sausage and I trimmed the excess fat off of the bacon. Mixed a little chili sauce into the ketchup to give the glaze a nice kick. Nice time I might mince some jalapeno peppers in.

Well, I did not put in the spinach, black olives or pistachios - my family wouldn't go for that in meatloaf! However, with bacon and jack cheese, I don't think this meatloaf CAN go wrong! I did add some garlic powder, worchestershire sauce, and 1/2 can of Hunt's meatloaf tomato sauce (and put the other half on top of the meatloaf).

this is a good meatloaf but i would suggest putting the loaf pan in a roasting pan or on a cookie sheet as there is a lot of grease. ran over the side of my pan sheet caught it all
