Delsuita was the name of my maid growing up abroad, and she always used to make this dish. Suffering from a pang of nostalgia, I asked my mom for the recipe, and couldn't have been more pleased at how easy it is!

Directions

  1. In a large bowl, mix the vinegar, lime juice, garlic, salt, and pepper. Place the chicken pieces in the mixture, and marinate at least 15 minutes.
  2. Heat the oil in a large skillet over medium heat. Transfer the chicken and marinade to the skillet. Cover, and cook chicken about 10 minutes.
  3. Mix the green pepper, onion, tomatoes, and ketchup into the skillet, cover, and continue cooking 15 to 20 minutes, until chicken is no longer pink and juices run clear.

HEY I'm the first to rate this! You talk about healthy! I used 2 T. lime juice, 1 1/2 lbs. boneless breasts, chopped the pepper & onion, & cut the tomatoes into wedges. Trying to do the low carb thing & my whole family loved it. Easy, too.

Family loved it. Did not use ketchup.

This was good and possibly make it again one day. I liked the tangy flavor, but not out of this world.
