Original recipe yields 1 -10 inch angel food cake

Directions

  1. Bake cake for filling according to package directions. Let cool.
  2. Slice angel food cake in half horizontally. Creat a tunnel for the filling by removing a small amount of the interior of the bottom half of the cake.
  3. In a bowl combine cream, confectioners' sugar and cocoa; whip until soft peaks form. Fold half the strawberries into half the whipped cream; spoon into cake tunnel, pressing down firmly.
  4. Replace top of cake; pressing gently. Frost cake with remaining cream mixture. Cover top of cake with remaining strawberries. Chill about 15 minutes before slicing. Serves 10-12 people.

The ..." See morefrosting is very light and not too sweet (just the way I like it). The only problem was the cocoa mixed with strawberries made the cake look an ugly brown - not very pretty. I made it the second time, without the cocoa. Instead of scooping out the middle, I made 2 8-inch cakes and layered them on top of the other with frosting & strawberries in the middle. And instead of MIXING the frosting with strawberries, I just frosted the cake and placed the strawberries on top of it and around it. Some rasberries and mint leaves in the middle to garnish. The second time was the charm!"
