“This is an every-day recipe in Taiwan. Bacon and egg are fried with a tortilla and served with hot sauce. If you are an average picky-eater, you will probably not enjoy. You may use either bacon or ham.”

  1. Fry the slice of bacon in a skillet over medium-high heat. Set aside. Reduce the heat to medium. Pour the egg into the skillet, and sprinkle with corn. Cook for less than 10 seconds.
  2. Lay the tortilla over the whole egg. After the egg is firm and attached to the tortilla, flip over, and lay the bacon on top. Put salsa over the bacon, and wrap. Remove from the skillet, cut into small pieces and serve hot.

This should be labeled breakfast burrito. A true Taiwanese Dan Bing uses a scallion/ flour dough. You should be able to buy Dan Bing Pi (Dan Bing skin) at any of your local Asian Markets. Also, you can put anything you want in a Dan bing, but should limit it to 2 fillings.

A good fast meal (though I'm not sure what is Taiwanese about it...). I tried it both as-is and with cheddar and sour cream, and it is much better at least with the sour cream. The addition of corn received mixed reviews in my house, but I, personally, liked the texture it added. It could be made even easier by just adding a tablespoon or so of real bacon bits to the egg.
