“This is a good cake frosting, and is especially good when the maple syrup can be purchased in March. You can use the artificial for those of you who do not live in the north, or cannot obtain it. This recipe will fill and frost a 9 inch cake.”

Original recipe yields 2 cups

Directions

  1. Place egg whites, brown sugar, maple syrup, water, and cream of tartar in the top of a double boiler over boiling water. Beat with a mixer until frosting has a good spreading consistency, and will stand in peaks. Remove from heat.
  2. Fill and frost cake. Sprinkle the top with chopped nuts.

Excellent recipe, very light and fluffy with lots of maple flavor! Substituted the cream of tartar for vinegar (3X amt of tartar amt) since I did not have any and was still great! Loved it!

This was good but a little sticky rather than peaky. I doubled the cream of tarter and that helped it peak more. I also removed it from the double boiler once everything was thickening up. I put it on a Black Walnut cake and my husband loved it. Garnished with walnuts on top of frosting.

Very tasty! I'm waiting to put it on the brown sugar brownies that are cooking and I can't stop eating it. It has a nice, light flavor.
