Original recipe yields 8 cups

Directions

  1. Preheat oven to 300 degrees F.
  2. In a small saucepan, combine JIF®, honey and cinnamon; heat through. Remove from heat and stir in vanilla. Place oats in a large, shallow roasting pan or a 15 x 10 x 1-inch baking pan. Pour warm JIF® mixture over oats and stir gently until oats are coated. Spread evenly in pan.
  3. Bake for 35 to 40 minutes, stirring occasionally. Turn off oven.
  4. Meanwhile, in a small bowl, cover raisins in boiling water. Let stand for 10 minutes; drain well. Stir raisins, nuts and figs into baked mixture. Return to oven and let dry 1 1/2 hours, stirring occasionally. Store in covered containers.

"I make this 2-3 times a week because I can't get enough of it! I have started making it in the microwave. I put the PB, honey and cinnamon in a glass measuring cup and put in the microwave for 1 min. ..." See morethen I stir it and microwave it for 1 more min. After its done I stir in the vanilla then pour it over the oats in a large mixing bowl. I've used the figs(they're very yummy) but I don't think its any better than a mix of raisins and craisins(what I usually use). I also always use diff. nuts because I don't like peanuts very much. I've used almonds, walnuts and pistachios that I roasted during the last 10 mins. of baking the granola. They all tasted great. All in all this recipe is very versatile! Sometimes I throw in extra oats (like 4 1/2 cups total) for a slightly dryer granola or I'll add these instant steel cut oats called "Coach's Oats" and it doesn't taste any different but is healthier. I usually use all natural PB (just mashed peanuts) and I haven't noticed a big difference between salted/unsalted or smooth/crunchy. It does taste sweeter if you use regular PB but its still delicious w/the healthy kind! Even reduced fat PB tastes great!."
