Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan.
  2. In a medium bowl, mix the flour, baking powder and salt. Set aside.
  3. In a large bowl, combine oil, eggs, sugar and milk. Beat until blended. Add flour mixture and beat until smooth. Fold in jam. Pour batter into 9x9 inch pan.
  4. Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes, or until toothpick inserted into center of cake comes out clean.

This recipe sounded good but came out heavy. The taste was just o.k.

You have to wonder what you are to do with a cake like this. It is very dense and almost is like a snacking cake but very plain. I used it as base for berries and whipped cream. You really cannot tell that there is strawberry jam in it. I used some homemade jam which actually was the bottom of a jar and was mostly the jelly and not the strawberries which may have been why we couldn't tell it was there. We really enjoyed this with the berries and whipped cream. DH had seconds. Thanks!

I kept everything as is except used 1/2 c jam. I baked it in cupcake molds and it came out tasting like sweet strawberry muffins.
