Original recipe yields 6 servings

Directions

  1. Place the shredded cucumber in a colander to drain. In a medium bowl, whisk together the gelatin mix and hot water until gelatin has dissolved. Mix in the sugar, salt and vinegar. Set aside to cool until it starts to set, about 1 hour.
  2. When the gelatin has thickened, stir in the mayonnaise, and fold in the drained cucumber. Transfer to a mold or serving bowl, and chill for 3 hours, or until set.

This recipe was just "okay." A good way to use up my overabundance of cucumbers, though. Next time I think I'll add some crushed pineapple.

Took the advice of the one reviewer of this recipe. I added the pineapple and it was very good. Also it does't need the extra sugar. I diffently will make again. Will freeze extra zuchhini and make in the winter months.
