“This is something I threw together one day. Prepare the veggies while the pasta cooks and you're done in 10 minutes. I use different kinds of tomatoes, depending on what I have on hand. Cherry or grape tomatoes are easy to just throw in - no cutting required.”

Original recipe yields 4 servings

Directions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, until al dente. Drain, and rinse under cold running water to cool.
  2. In a bowl, gently toss together pasta, avocado, tomato, dressing, and bacon. Chill until ready to serve.

My boyfriend and I love this recipe. We added black olives and left out the avocado, only because we did not have one. We used turkey bacon too and it was fabulous. My 5 year old loves is also a fan!!! Great recipe Sarah.

I followed the recipe exactly... and it was just off. My husband and I even tried it the next day with more dressing... no go. Just no flavor. Very dry.
