  1. In a bowl, mix the pineapple and the reserved juice from 1 can, mangos, peppers, cilantro, lime juice and pulp, orange juice, rum, and garlic. Let stand for one hour before adding chicken.
  2. Strain the juice from the salsa to use for the marinade. Set aside enough salsa without the juice to use for topping the chicken. Marinate the chicken breast halves in the bowl with the remaining salsa and juice mixture for 2 to 6 hours.
  3. Preheat oven to 325 degrees F (165 degrees C).
  4. Discard salsa used for marinating, and bake chicken for 30 minutes in the preheated oven, or until chicken juices run clear. Top with reserved salsa to serve.

The marinade/salsa gave the chicken a nice flavor. As far as a side dish of salsa, I would have liked a little more "zing" in flavor, but I think I could modify that by adding a touch of jalape...

very time consuming to chop all the fruit for salsa. marinade doesn't quite get into chicken enough. best to set over night.

Excellent change for ordinary chicken. We grilled this on the b-b-q and it was so tender and the flavor was wonderful! Our company loved it! I would have liked to taste the rum a little more :)...

This chicken was awesome!!! My family loved it. I served it on top of brown rice seasoned with cilantro, oranges, butter, cayenne pepper, and garlic. Definitely recommend!!!

Other than using fresh pineapple and canned juice, and I used canned diced chilies, I followed the recipe and proportions. It tasted OK, just didn't have a lot of flavor. This surprised me becau...
