Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place bacon in a skillet and cook over medium heat until the pieces are browned. Remove with a slotted spoon to paper towels. Discard all but 1 tablespoon of bacon grease. Stir in onions and mushrooms, and cook until soft. Remove from heat.
  3. In a large bowl, stir together beef, egg, and milk. Stir in the onion and mushrooms. Mix in about 4 ounces of Swiss cheese, and all but 1 tablespoon of bacon. Stir in cornflake crumbs, and mix until well blended. Shape into a loaf, and place in a meatloaf pan.
  4. Bake in a preheated oven for 1 hour. Drain fat, and sprinkle with remaining cheese and bacon. Return to oven, and bake until cheese is melted, about 5 minutes.

Wow, this was probably the best meatloaf I've ever made! The changes I made were to omit the evaporated milk (I was making this with 8oz meat, and didn't want to open a whole can for for a couple of tsps), add a heaped tbsp of French Onion soup mix, and I put a thick slice of cheese on top at the end so it would melt down nicely. We both really enjoyed this. Thanks so much!

My family really liked this. I added more mushrooms and as I didn't have any cornflakes I used breadcrumbs instead. I think when I make this again I might save some mushrooms to go on top as well. Hubby said can you make this again soon. Many Thanks.

This tastes just like my favorite burger! I made this with ground turkey and used over 8 ounces of mushrooms. I left everyting else the same. It turned out wonderful! The whole family loved it. Even my newly picky 3 year old ate a whole slice. The prep did take a bit longer than my normal meatloaf, but no reason not to make this again!
