This quick and easy recipe tastes so good! You can substitute shallots for the onions if you wish. My family loves this recipe.

Stir in onions and mushrooms; reduce heat to low, and cook until the mushrooms are soft and blackened and the onions are black around the edges. (Add additional olive oil as needed.) Turn the heat off, drizzle with 1 1/2 tablespoons olive oil, and season with salt and pepper. Sprinkle generously with Parmesan and Asiago cheeses.

Sauteed the mushrooms and onions in extra virgin olive oil with a paste made of fresh garlic and a little sea salt. Topped them with grated fresh Parmesan and skipped the Asiago. Beautiful--especially served alongside our grilled steak and "Smashed Cauliflower," also from this site.

Tasty and quick. I used fresh garlic instead of garlic flavored oil. Next time I would cut the total amount of olive oil in half, to make it even healthier and lighter.

Couldn't have been easier to prepare. I used fresh garlic and olive oil instead of garlic flavored oil. Also, added a tad of butter. Put on top of a salad. Used presliced portobelo mushrooms.
