Original recipe yields 10 burritos

Directions

  1. Wrap tortillas in foil and place in 300 degree F oven to warm.
  2. Crumble and cook sausage and peppers in skillet over medium heat until browned. Pour in beaten eggs and onion and continue to cook.
  3. In a separate bowl, combine cream cheese and Monterey Jack cheese.
  4. On each tortilla, spread a thin layer of cheese mixture. Top with sausage and peppers mixture. Roll up and serve with salsa.

I cut the recipe way back because I..." See more didn't need quite that many and used regular breakfast sausage vs. maple. I also used a mix of Cheddar and Jack cheese. You can add pretty much anything you want or have on hand because once you combine meat, scrambled eggs and cheese in a warm tortilla it's bound to be good. All you need is a side of salsa, sour cream, a little tabaso or cholula and you're in for a real breakfast treat!"
