Original recipe yields 6 servings
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Spread oil over the bottom and sides of a 9x13 inch baking dish. Add chicken and turn to coat. Squeeze limes over chicken. In a small bowl combine the mayonnaise and cheese; mix together and spread mixture over chicken. Bake in the preheated oven for about 20 minutes or until juices run clear.

Then for an extra measure of..." See more lime flavor, I added a "dash" of roses lime juice to enhance the real limes I did use. I am glad I cut the mayo - it would have been too strong otherwise. I also blended the mayo and the parmesan with a hand mixer for about 1 minute on low. TIDBIT: 12 tablespoons parmesan is equal to 1 CUP."
