“This is a very low-fat, low-calorie salad. I make it all year long, but it is especially great for Thanksgiving and Christmas. Just freeze a few bags of cranberries to use at a later date. Original recipe yields 9 - 1/2 cup servings

Directions

  1. Combine cranberries, apple, celery, grapes, raisins, walnuts, sugar, cinnamon, and yogurt. (I chop cranberries in a food processor, and it works great). Toss to coat. Cover and chill 2 hours.
  2. Stir just before serving. Garnish with frosted cranberries and mint leaves if desired. For frosted cranberries, wet cranberry and roll in sugar.

"This was the 1st time I ever used whole cranberries. I tried it once with dried cranberries but it was too sweet for my taste. The 2nd time I made it, I used the cranberries in the bag. As I try to..." See more reduce the amount of sugar in my foods, I substituted Splenda for the sugar. I also used plain nonfat yogurt (that has no extra sugar added) & then just added a tsp. of vanilla. If you think the dish is too tart, you can just add a little more Splenda. I'd suggest stirring it before serving as it gets a little watery. Next time, I think I'll double the recipe."
