Original recipe yields 10 servings

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix the mashed sweet potatoes, white sugar, eggs, 1/2 cup of the butter or margarine, vanilla and flaked coconut. Place in heat proof 2 quart sized casserole dish.
  3. With a fork mix the brown sugar, flour, pecans and the remaining 1/3 cup of butter or margarine. Sprinkle over the top of the potato mixture. Bake at 350 degrees F (175 degrees C) for 30 minutes.

Great dessert. I used 2 baked sweet potatoes that were left over and added honey instead of sugar, and left out the butter. I only put butter in with the topping which was delicious even though I didn't have any coconut to add. Will definitely make again!

My mom made this for the holidays and it was the best. I made it for christmas and it is very easy and everyone wanted the recipe. Will make this again.

I have never really cared for sweet potatos until I fixed this recipe one Thanksgiving. I have fixed it every year since and everyone comments on how yummy it is compared to more traditional recipes.
