Directions

  1. Mix sugar substitute with orange juice. Pour over chopped cranberries. Soak 1 hour, mixing often.
  2. Mix raisins, nuts, coconut, lemon rind in flour until well coated. Add cranberries and orange juice mixture. Sprinkle baking soda over mixture, and mix. Mix in spices. Fold in crushed pineapple. Pour batter into a greased and floured 9 inch loaf pan.
  3. Bake at 325 degrees F (165 degrees C) for 40 minutes. Cool.

This cake was wonderful..I didn't change a thing - you would never know that it is sugarless & low fat.

Very nice flavor and very moist. Next time I will chop the nuts and fruits smaller, mine was too chunky.

My Hubby is a Fruitcake Lover. I have baked this one already 6 times and he loves it alot. Because he is an Diabetic most of them loaded with sugar but this one is the best. It's full of Fruits and just a little Flour.
