  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. In a large bowl, mix together the ricotta cheese, eggs, Italian seasoning, mozzarella cheese, Parmesan cheese and spinach. Set aside.
  3. Divide the bread dough into 8 pieces and roll each piece out to about an 8 inch circle. Spoon about 1/2 cup of the ricotta filling onto each circle, fold over and seal the edges. Place onto a greased cookie sheet.
  4. Bake for 30 minutes in the preheated oven, or until nicely browned on the tops and bottoms.

I made one as stated in the recipe so that I could review it honestly (except using a can of Pizza Dough). The rest we had "build your own Calzone" night. I had sauteed mushrooms, canadian bacon...

Delicious! I followed the recipe except for the dough. I used Pillsbury Refridgerated Pizza Dough (one roll made 4 square calzones). It was really yummy & since I didn't have to roll out dough, ...

mmmmmmm, i made these delicious calzones as written with the exception of adding a small sauteed onion to the ricotta mixture. homemade whole wheat pizza dough compliments this recipe even more....
