Directions

  1. Preheat oven to 350 degrees F (175 degrees C)
  2. In a large soup pot, boil potatoes until soft. Add sliced apples just 5 minutes before potatoes are done. Remove from heat. Drain.
  3. In a large casserole dish, mix potatoes and apples. Dot with butter. Sprinkle brown sugar, walnuts, and raisins on top of potato mixture. Pour apricots over top.
  4. Bake uncovered for 30 minutes.

Excellent! The first time I made it I had no apricots so I left them out, and it was still wonderful. The next time, I used canned peaches, dribbling the syrup over the dish, and it was really special. Thanks!

This is delicious! I also use this recipe without adding the canned apricots. I also cube the sweet potatoes and add a pinch of cinamon. A family favorite!

This dish was fabulous. I was unsure how to cut the potatoes. I peeled them and then quartered into long flat pieces.
