Directions

  1. Wrap 1 piece bacon around each scallop; secure with toothpicks, if necessary (metal toothpicks pictured; if using wooden toothpicks, soak in water 20 minutes). Place wrapped scallops in 13x9-inch baking dish. Combine oil, brandy, parsley, garlic, pepper, salt and onion powder in a small bowl; mix well. Pour over scallops; cover and marinate in refrigerator at least 4 hours.
  2. Remove scallops from marinade; discard marinade. Arrange on rack of broiler pan. Broil, 4 inches from heat, 7 to 10 minutes until bacon is brown. Turn over; cook 5 minutes or until scallops are opaque. Remove toothpicks. Arrange over salad greens and garnish, if desired.

Yum! Yum! Yum! These were sooooo good! I made these as an appetizer for our Valentine's dinner and I did wrap them but used regular pork bacon. I too panfried them as I'm not very good when it comes to broiling!! I also turned them over about halfway through the marinating process. My husband said they were company worthy!

i made this yesterday for a super bowl party and they were a hit!!!!! The only thing i did differently was : I did not add the bacon, and I let the scallops sit in the marinade over night, and finally instead of baking the scallops I pan seared them in olive oil. Delicious !!!
