Original recipe yields 40 cookies

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  2. Cream the butter and sugar until light and fluffy. Separate the egg and reserve the egg white. Beat the egg yolk into the mixture. Mix in the flour. Beat the egg white until is stands in peaks. Cut it into the dough. Drop by teaspoonfuls 3 inches apart on cookie sheets.
  3. Bake 12 to 15 minutes, or until edges are golden.

Perhaps I made them too large, because I didn't get 40 cookies out of them. In fact, it was more like 10-12 cookies. However, I thought mine were a good size. Oh, and they make a very sticky dough, but don't worry about adding extra flour. They are good as is! I will definitely be baking these again."
