Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. In a small saucepan over low heat, combine butter, water, and dates. Bring to a boil, then remove from heat, and let stand for 10 minutes.
  3. Pour date mixture into a medium bowl. Mix in the brown sugar and chopped nuts.
  4. Whip egg whites in a small bowl until stiff. Fold egg whites into date mixture. Roll dough into 2 inch balls and roll in shredded coconut. Place on cookie sheets about 2 inches apart
  5. Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

I loved these as a kid and when my mother died she didn't leave any recipes for anything, which was probably good, because she wasn't much of a cook, however, I haven't made cookies in 35 yrs. ...

This was a very bizarre cookie. The cookies never hardened and remained gooey blobs that stuck to your teeth. I wouldn't go through the trouble to make them again.
