I was in the mood to make something with butterscotch in it, and this is what came of it! I meant to make these for my friends, but my family got to them first! Enjoy! If you don't have apple jelly, use apricot preserves, its also really yummy!

Directions

  1. Preheat an oven to 375 degrees F (190 degrees C). Grease the bottom of a 9 inch square baking dish.
  2. Mix the flour, oats, white sugar, and brown sugar in a large bowl. Cut the butter into the flour mixture until the mixture is crumbly. Set aside 3/4 cup of the mixture and press the rest into the bottom of the prepared dish. Spread the top with the apple jelly.
  3. Stir the reserved flour mixture and the cashews together in a bowl; sprinkle over the apple jelly. Scatter the butterscotch chips over the cashew mixture.
  4. Bake in the preheated oven until golden brown; 30 to 35 minutes. Allow to cool completely before cutting into bars.

These are incredibly sweet, as was mentioned by other reviewers, so I did cut back on the sugar. I briefly heated the the jelly in the microwave on a low setting just a little which made it more spreadable. As I was putting the baking dish in the oven, I noticed that I'd forgotten the cashews, so I just sprinkled them on top of the butterscotch chips which worked fine.

This recipe calls for apple jelly, but I used apple butter, as it is a richer product with a spicy fall flavor. I was craving butterscotch but wanted something different than just cookies with butterscotch chips. This recipe is absolutely amazing and gooey. Not for people afraid of very sweet treats!

These are amazing. I baked them with apricot spread since I couldn't find apple jelly. The only thing I might change is add a little less sugar next time, they are pretty intense, but super delicious!
