I have made this recipe several times. It's very good. I had mozzarella cheese so that's what I used. You can sprinkle a little Parmesan cheese for a little more flavor. It's one of our favorite. I bought a mandolin from HSN that's inexpensive and the best I've ever used. I do want to make it with Gruyere cheese because it's a more flavorful cheese.
