Made it with 2 days old cooked rice and didnt have a green onion so I chopped up a shallot and also cooked the egg first before adding it to the rice

Three tips: 1. Day old rice is indeed much better because freshly cooked rice tends to have too much moisture and doesn't fry well. 2. The recipe also needs garlic and ginger to give it the flavor one expects from Chinese fried rice. 3. Real restaurant-style fried rice usually involves frying the ingredients (egg, meat if using, vegetables, rice) separately and combining at the end. Hope this helps!
