Dee, it could be the eggplant you used was sour... It's too bad, a lot of work...I don't care how easy it looks to make it, but it is work.. good luck on the next batch!:)

I tried this and for some reason the eggplant was bitter. I followed the recipe exactly. Could it have just been the eggplants I had, or something I didn't do correctly? I've used recipes like this before and they called for you to batter and fry the eggplant. I like the fact that with this recipe you don't have to do that. That was good, but a terrible mess. Lol
