This was the best jelly roll cake Ihave tried. I did not change anything. It came out like a pro. I have made about twenty of these. They freeze very nice. I used a spray bottle with water just to damp a towel, then sprinkled powder sugar on it. Dumped cake right out of the oven on to towel and rolled it. Try it with Sweet Potatoes.

My cake stuck to the towel when I unrolled it. What a mess!

One recipe said to use a "damp" towel. I would surmise that a damp towel would help to keep the cake moist and flexible.
