Can you substitute cinnamon roll dough instead of crescent rolls for one of the layers?

Can the honey be omitted? If so, what else can be substituted for honey? Or is just plain ok?

I also add apple pie filling on top on of the cream cheese and instead of honey, I drizzle carmel sauce. Then top it off with some fresh whipped cream. Delicious!!
