I have found that when bacon wrapping seafood a microwave of the bacon is a must. I suggest you microwave them as long as you would to make breakfast minus one minute. Seafood only needs 2 or 3 minutes on the grill which is not really enough to cook the bacon, much less crisp it! I imagine the parboiling helps, but to get the full bacon flavor and the contrast between the crispy bacon and tender seafood, try microwaving first!
