If you chill the pasta thoroughly before you add the rest of the ingredients, it will not absorb as much of the mayo.

Needs more mayo. As it sits the macaroni will absorb the mayo. Also good with some sweet pickle relish.

I have never seen a Macaroni salad using cucumber. I use it all the time. Remove the seeds. It makes the salad taste so fresh and clean. Use as much as you prefer. Chop it as you like. It stays quite well in the salad for a few days time.
