Jan 20, 2013 3:01 PMI brine my turkeys and pork roasts in a small cooler. Who has enough space in the fridge for that giant pot, especially near the holiday? Make enough brine to cover the bird and then add a small bag of ice. Snap the lid tight and the temperature will stay in the "safe zone" all night. Additionally, you can wrap the finished bird in foil and rest it in the same cooler, holding the temperature for a good hour. Put newspaper in the cooler to collect juices. This is a nice trick while waiting for late guests.
