I peal eggplant because I don't like the bitter skin. I slice in 1/2 inch slices. Dip in egg then thin layer of breadcrumbs, drizzle or spray a little olive oil over top. Put on parchment paper in oven at 350 for 30 minutes or until soft/done. Great alone or with sauce and cheese for eggplant parm. DELISH!
