Presentation speaks volume. The dish is very colorful as it is, but to "add" to it and mix it up a bit, instead of a full pint of the cherry tomatoes, substitute a half orange pepper. Also, don't just dice the peppers...smaller slivers. Also, do the same with the red onion, and use red onion AND green onions for all the added color you can bring to the dish! :) Like they say, you taste with your eyes~~:)
