I have made many variations of this soup depending on what I have in my pantry and fridge and it always turns out fantastic! I made it yesterday and used the El Pato tomato sauce and it gave it a nice flavor. I have also used leftover tomato soup and tomatoes that needed to be used up. I usually use leftover chicken and throw everything in my rice cooker on high for 2 hours. Very forgiving recipe!

Instead of corn, you could use a diced yellow pepper for the color.

My husband won't eat corn. What is a good substitute for the can of corn?
