I am also allergic to onions - but only if they are not cooked. I can eat them in foods when they are cooked well. I don't know if you have tried this...

don't use anything else. You can add your favorite seasoning to it. And I would suggest use a smoked hock. If you can get one from a farm that would be best to use since it will give it better flavor. The store bought ones do not taste as good. Then you wont miss the onions.
