Feb 28, 2013 5:46 PMI love seeing vegan recipes on "mainstream" sites. Another great way to make a vegan cake is to use a box mix with no added dairy/egg and just pour in a can of natural soda.

Here's one suggested by a commentor on the recipie's reviews: Vegan Buttercream Frosting ¼ cup softened margarine, ½ teaspoon vanilla, 1½ cups powdered sugar, 1 tablespoon soymilk or enough to make the consistency spreadable. Mix together until smooth. I made bot of these tonight, and they ar delicious.
