Flan shouldn't have those bubbles. It should be completely smooth usually those wholes or bubbles are the result of overcooking. The custard should also be strained before pouring out.

Very let down - this is the egg custard my Wisconsin grandmother made when I was a kid in the early 70's. Very delicious if you like eggs (which I do) but can we please call it what it is? EGG CUSTARD WITH CARAMEL SAUCE!!! Goes great with venison and dandelion greens. Great hearty meal if you're working out of the pantry. Respectfully yours.
