Mar 14, 2013 1:41 PMI use a grapefruit spoon to scoop out the potatoes. I substitute Parmesan cheese and regular onions. I bake them for an hour. Potatoes can be made the day ahead and refrigerated or frozen for future use. Bring to room temperature before baking.
