Sooo good. I made mine with red bell peppers!! Kinda like a vegetarian take with Caramelized diced yellow onions, diced red bell peppers, garlic until tender, added brown rice, diced portobello mushrooms, spinach and diced tomatoes. Topped it off with some tomato sauce and grated cheese and put it back in the oven for 5 minutes or even in the microwave for 2 minutes or until cheese is melted!! Yummy and healthy!!
