You don't need a deep fryer, all you need is a WOK that will work just as well for deep frying, and is cheaper.

I am from the Buffalo area and I have been making this sauce for years and Chef John is correct with it and If you take the butter out will be a little bit hotter or add more butter to make them more on the medium side.MMMMMMMMgood

Chef John, in your video recipe it looks like you are using 1/2 stick (1/4 cup) of butter, but your written recipe calls for 1/2 cup. Perhaps I'm wrong...can you clarify please?
