I have used Chef John's recipe now for two years. I always come back and review the video - every year, just to remind myself of the process. My husband, who typically cannot stand turkey, LOVES this. Best bird he's ever had! Thank you, Chef John & AllRecipes! I add a good organic vegetable broth to the roasting pan in with the mirepoix, instead of the plain water. It adds a beautiful, rich sweetness to the meat during cooking and creates a flavorful stock for the leftover turkey soup later.

great solid recipe for a juicy turkey, however would be helpful to show the link to the herb butter recipe, or at least mention what kind of herbs you used. That you don't mention it is quite frustrating.

loved this video try'd my Turkey this way & WOw very inpressed...My Turkey came out so good thanks my whole thanksgiving Dinner came out better this year than any other years past
