Spicy Bean Salsa

In this video, you’ll see how to put a tasty twist on tomato salsa. This ‘cowboy caviar’ stars whole kernel corn, black-eyed peas, black beans, jalape... See moreno peppers, and a tangy Italian-style dressing. Serve with tortilla chips or spoon it onto sandwiches, burritos, tacos, and nachos. Watch the video, then get Susan’s 5-star recipe for Spicy Bean Salsa. It’s best if you let it marinade overnight. This is delicious if you use fresh, roasted on the grill corn and red onion instead of white. And, you can use 7 Seas Red Wine Vinegar Dressing if you can find it.

This is wonderful. I usually substitute commercial salsa instead of the Italian dressing, and add cilantro. In case there are leftovers it is wonderful added to a taco salad.
