How to Make Caramel Chicken

In this video, Chef John shows you how to make a delicious, Vietnamese-inspired caramel chicken recipe that’s based on the famous chicken dish served at a popular San Francisco restaurant. You’ll learn why chicken thighs are your best bet for this one. Then you’ll see how to caramelize the brown sugar-based sauce, cooking it down to a syrup that adheres beautifully and deliciously to the chicken pieces. Serve this delicious mahogany-colored chicken over white rice garnished with cilantro, sliced jalapenos, green onions, and roasted peanuts. And in a Chef John BONUS moment, you’ll learn why he recommends eating it while listening to the Rolling Stones. Get the recipe for Chef John's Caramel Chicken.

What a great recipe this is and the video really helps to visualize the deep rich color that is should be. Thanks!

There is a link at the bottom of the end of the paragraph for the recipe (Where it says Caramel Chicken in blue). This takes you to his foodwishes page which has the recipe below.

looks like the same measuring cup he used before.... 1/3 cup. I use the pause (=) button to write down each step and then restart using the right arrow (>) since I couldn't find the recipe either.
