Shortening?!?!?!?! Yeast?!?!?!?!?!? That is NOT A BEIGNET!!! Beignets are made from pâté à choux, which itself is a pastry made strictly from butter, water, flour, and eggs, and absolutely nothing more! Chux is normally baked (cream puffs are made of this dough), but if fried, they are beignets. They puff up because the water reacts with the hot (MUST BE AT LEAST 375°F) oil flashing the water into hot vapour, which seals the surface and inflates the dough.
