Pumpkin Creme Brulee

Impress your Thanksgiving dinner guests with this spectacular seasonal dessert. In this video, Chef John shows you how to make a quick pumpkin crème brulee. All you need are egg yolks, brown sugar, cream, canned pumpkin puree, and classic pumpkin pie spices. You can also make this with butternut squash puree. It’s spectacular. You’ll discover what just a little pinch of salt does for the flavor of this crème brulee. You’ll also see Chef John work his magic with a kitchen blowtorch, turning the sugary tops into thin, hard-as-rock-candy layers above the sweet and creamy pumpkin goodness. Get the recipe for Chef John's Pumpkin Creme Brulee. Spooned into individual ramekins and baked in the oven in a water bath (to help them cook evenly), these simple but spectacular desserts make perfect holiday treats. I like this recipe - except for the crazy amount of sugar glazed on top. I don't need nearly that amount to achieve a crackling on top. I want a soft thin crack, not a layer of brittle!

I really like this Chef..however, I am really picky about the texture of my Brulee.I would have liked to see the texture after he torched it! (just to see if its creamy/saucy (instead of custardy which I do not care for)! I am going to try it though! Thank You for the video!
