Tried this method a couple days ago, and the pan gravy recipe that follows. Turned out perfectly perfect! This is my go-to roast chicken recipe from now on! used dried herbs instead of fresh, and stuffed cavity with lemon wedges, celery stalk, and red onion wedges. We were in heaven!!
