Here’s a simple and delicious summer meal. The preparation just couldn’t be easier. Swordfish steaks are rubbed with a little grapeseed oil and salted and peppered; then grilled along with slices of French bread brushed with olive oil. Plate it up and dress with fresh cherry tomatoes in a super-simple balsamic vinegar and fresh basil vinaigrette. The vinaigrette creates a delicious “sauce” that soaks into the grilled bread. Amazing! Followed directions with bread, balsamic vinegar and grilling times. Substituted what we had on-hand for others: used slice grapes (seedless, dark) and kale for the tomatoes and Thai basil. The wait time is perfect, allows all flavors to settle and start to blend. Have Thai basil in garden because it is pretty. Look forward to trying it on a future dinner.
